I’m Yvette, and this is our story.
Our journey began with my father, Domenico, born in Carbonara, Bari, Puglia, Italy, in 1950. In 1965, he moved to Australia, bringing with him cherished heirloom recipes and culinary traditions passed down by my Nonna. Her passion for Pugliese cooking and dedication to our family’s heritage remains at the heart of everything we do today.
In August 2022, we launched Sempre Fresh, our online catering business specialising in traditional homemade Italian meals. It was here that our beloved focaccia was born, quickly becoming a favourite.
By January 2024, we proudly launched The Focaccia Factory to continue celebrating our authentic Pugliese heritage. Made with the finest ingredients, like extra virgin olive oil and sun-ripened tomatoes, our focaccia reflects time-honored techniques and family traditions.
For us, this is more than food - it’s a celebration of family, cherished memories, and the love of keeping traditions alive, just as my father did when he came to Australia.

Originating from Bari, a city in the Puglia region of Italy, celebrated for its simplicity and rich flavour. Here's what makes it special.
Made with a blend of high-quality flour, mashed potatoes (for softness), water, yeast, and extra virgin olive oil, which gives it a distinctive richness. It is light, airy, and soft on the inside with a golden, crispy crust. It strikes a perfect balance between fluffiness and crunch.
Typically topped with sun kissed cherry tomatoes, bold olives, a sprinkle of aromatic oregano, and a generous drizzle of olive oil it captures the simple, vibrant flavours of Bari.
Steeped in tradition and made with care, this beloved recipe has been passed down through generations, delivering a true taste of Italy’s southern charm.
Rooted in Pugliese tradition but uniquely ours, a long fermented and super hydrated dough that is potato free for a focaccia that's tall, soft inside, and deliciously crisp on top.
